Cock-a-leekie Soup

Fresh Leeks (cut off roots & just into green leaves)
Butter
Flour
Milk
Chicken Base (use a low salt paste, available in heath food stores)
White Pepper

Cut leeks in slicer of food processor, then fill sink and wash thoroughly. Sand will settle in bottom of sink and leeks will float. Do this several times, no point in ruining soup because of sand. Drain. If you have lots, freeze some in freezer bags, works very well. Sautee
leeks in butter, this is the only time they cook so cook over low heat until very soft. Add flour until butter is absorbed, cook a few minutes. Slowly add milk, stirring constantly so soup is smooth. Season with white pepper. Add chicken base. Taste and add more if you want stronger chicken flavor. No salt is necessary, as the base will have plenty of salt flavor.
